Simple Healthy Muffin Recipe: Let Kids Choose the Flavor!
Turn on your oven to 350 degrees. In a medium-sized mixing bowl, add 2 cups of whole wheat flour, 1 tsp. baking soda and 1 tsp. baking powder. Mix together and form a well in the center. Pour in 1 cup applesauce or vanilla yogurt. Add 1/4 cup canola oil, 1/4 agave and 1 cup soy milk or substitute. Mix well and then add 1 cup of your kids' favorite muffin flavor, such as berries, chocolate chips or raisins. Fill your greased muffin tins 3/4 full and bake for 15 to 20 minutes. Experiment with flavors and different types of flours, such as almond meal or gluten-free.
